1 | can black beans, rinsed and drained |
1 | can Mexican corn, drained |
1 | can Rotel tomatoes, drained |
2 | tomatoes, diced |
1 | bunch scallions, diced |
1-2 | avocados, diced |
1/2 | cup cilantro |
juice of one lime | |
3 | Tbsp. olive oil |
Combine all ingredients in a bowl and toss gently. Serve with tortilla scoops.
