From the Vault: Easy Crab Appetizers

1 package extra large flour tortillas
16 oz. softened cream cheese
1/3 cup mayonnaise
¼ cup red bell pepper, minced
2 cups cheddar cheese, finely shredded
8 oz. imitation crab meat, flaked
Remove tortillas from the refrigerator and allow them to soften. Combine cream cheese, mayonnaise and red bell pepper. Spread a thin layer of the cheese mixture on tortillas. Sprinkle on a layer of cheddar cheese and arrange a single layer of crab meat on top. Tightly roll up each tortilla and roll individually in plastic wrap. Refrigerate for at least three hours. To serve, cut each roll into ¾ inch slices. Makes approximately 60 appetizers.
