Cool Melon Salad

As things start to heat up, you’re looking for ways to cool down – especially once you hit the tennis court. This spring, try out some of our favorite no-bake recipes submitted by ALTA members that are served cold for those days when the sweat won’t stop.

Cool Melon Salad

2/3 cup watermelon, honeydew, cantaloupe balls

½ cup plain, low-fat Greek yogurt

1 radish, thinly sliced

1 tbsp. white balsamic vinegar

2 tsp. honey

2 tbsp. chopped parsley

1 tbsp. extra virgin olive oil

2 tsp. lime juice

Bacon bits as desired

Salt and pepper to taste

 

Spread yogurt evenly in a circle on a large serving plate. Whisk parsley, vinegar, honey, oil, lime juice, salt and pepper in a medium bowl. Add all melons balls and radish to the bowl and toss gently. Using a slotted spoon, mound melon mixture on top of yogurt and set aside the vinegar mixture left in the bowl. Sprinkle the mound with bacon, if desired. Drizzle two tbsp. of remaining vinegar mixture and throw away the rest.
