As things start to heat up, you’re looking for ways to cool down – especially once you hit the tennis court. This spring, try out some of our favorite no-bake recipes submitted by ALTA members that are served cold for those days when the sweat won’t stop.

Chocolate Chip Cheese Ball

8 oz. cream cheese, softened

½ cup butter, softened

3/4 cup confectioner’s sugar

2 tbsp. brown sugar

¼ tsp. vanilla extract

¾ cup miniature semi-sweet chocolate chips

¾ cup finely chopped pecans

Graham crackers

Beat cream cheese, butter and vanilla until smooth. Beat in sugars just until blended. Stir in the chocolate chips. Refrigerate, covered, for about two hours or until firm enough to shape. Place mixture on a large sheet of plastic wrap and shape into a ball. Refrigerate, wrapped, at least one hour. To serve, roll cheese ball in pecans. Serve with graham crackers. Yields 16 servings, about two tbsp. each.
