8 oz. orzo pasta
3 Tbsp. olive oil
Juice of 1 lemon
Fresh dill, chopped
Salt and pepper to taste
Spinach leaves, sliced thinly
1 pint sweet grape tomatoes, halved
Feta cheese
Kalamata olives
1 can garbanzo beans, rinsed and drained
Cook orzo as instructed on package. Drain. Rinse with cold water. Drain. Put in large bowl. Add olive oil, lemon juice, dill, salt and pepper to taste. Mix well. Add remaining ingredients and mix. Chill.
